Ötztal Sennerschnitzel (Alpine herdsmen wiener)

Ingredients for 4 people:

  • 8 thin slices of pork loin
  • 100 g curd
  • 100 g spicy Alpine cheese
  • Fresh herbs (to personal taste)
  • For example: chervil, basil, sengi, chives, etc.
  • Salt and pepper

Pound the pork loin finely with the cheese. Fill with the lard and stir to the half.  Pound the wiener tripe a bit flat. Mix flour and egg with salt and pepper and cook in a pan until it turns golden.

We serve the Sennerschnitzel with butter spätzle (noodles) and creamy champignons.

Graukasnock’n

Ingredients for ? people:

  • 150 g dumplings bread
  • 100 g Tyrolese grey cheese
  • 100 g curd
  • 2 eggs
  • ½ onion
  • A little milk and butter
  • Salt, pepper
  • A pinch of caraway (Kümmel)
  • Chopped parsley

Finely chop the onion and sauté in butter, mix with milk and pour over the dumplings bread. Let rest for a while. Crumble the gray cheese finely and hoist with the curd under the mass. Season and let rest. Form dumplings with a spoon and let rest in boiling water for approx. 7 min.

We serve the Graukasnock’n with steamed white cabbage and brown butter.

Rosa fried Ötztal Mountain lamb

Ingredients for 2 people:

  • 2 pieces of lamb haunch
  • 2 garlic cloves
  • Rosemary, garlic, thyme
  • Salt, pepper

Marinate the lamb haunch with chopped garlic, rosemary, thyme and a little cooking oil. Let rest covered for a couple hours. Then season with salt and pepper and sauté on a pan. Then cook in a refractory mold at 78° C in the oven for three hours.

When served with green beans and potatoes with rosemary it makes a wonderful meal.
